Ingredients for Spicy Biryani

For the rice:

  1. 2 cups basmati rice
  2. 6 cups water
  3. 2 bay leaves
  4. 4 green cardamoms
  5. 6 cloves
  6. 1 inch cinnamon stick
  7. 1 tsp salt

  1. 2 large onions, thinly sliced
  2. 2 tomatoes, chopped
  3. 1/2 cup chopped mint leaves
  4. 1/2 cup chopped coriander leaves
  5. 1/2 cup oil or ghee
  6. 1 tsp cumin seeds
  7. 1/2 tsp garam masala masala
  8. 2 chopped spring onion chillies

For the final layer:

  1. Saffron strands soaked in 2 tbsp warm milk
  2. 2 tbsp ghee
  3. Fried onions (optional)
  4. Chopped coriander and mint
