Ingredients
Main Ingredients:
- Chicken – 500 gms (boneless or boned)
- Fenugreek Leaves – 1 cup (fresh) or 3 tbsp (dried kasuri methi)
- Onion – 2 medium (finely chopped)
- Tomatoes – 2 (puréed)
- Ginger-Garlic Paste – 1 tbsp
- Curd – ½ cup (whipped)
- Green Chillies – 2 (lengthwise) chopped)
- Oil – 3 tbsp
- Salt – to taste

- Turmeric powder – ½ tsp
- Red chilli powder – 1 tsp
- Coriander powder – 1½ tsp
- Garam masala – ½ tsp

Step-by-Step Methi Chicken Recipe

Step 1: Preparing fenugreek
- If you are using fresh fenugreek, wash and chop it finely and soak it in salted water for 10 minutes to remove the bitterness.
- If you are using dried fenugreek, lightly roast it and crush it.
Step 2: Marinating the chicken
- Add curd, turmeric, salt, some ginger-garlic paste and red chilli powder to the chicken and marinate for 20 minutes.
Step 3: Making methi chicken
- Heat oil in a pan and add onions and fry till golden brown.
- Then add ginger-garlic paste and fry for 1 minute.
- Now add tomato puree, salt and all other dry spices and fry the masala well.
- Then add marinated chicken and cook on high flame for 5 minutes.
- Slow the flame, cover and cook for 20–25 minutes until the chicken becomes soft.
- Now add fenugreek leaves or kasuri methi, green chillies and cook for 5 minutes.
