Step-by-Step Kheer Recipe | Traditional Kheer Recipe

Step 1: Rice Preparation

Wash the basmati rice 2-3 times and soak it in water for 30 minutes. This helps the rice to swell well while cooking and the kheer to become thick. After this, strain the rice and keep it aside.

Step 2: Boiling the Milk

Pour the milk into a heavy bottom pan and keep it on medium flame. Keep stirring the milk till it boils so that it doesn’t stick to the bottom. As soon as the milk starts boiling, reduce the flame and let it thicken for 10-15 minutes.

Step 3: Adding rice

Now add soaked rice and cook on low flame while stirring continuously. It takes about 20–25 minutes for rice to cook. Keep in mind that the rice does not stick to the bottom so keep stirring with a spoon every 2 minutes.

Step 4: Add sweetness and aroma

When the rice is fully cooked and the milk thickens, add sugar to it and mix well. Now add cardamom powder, saffron strands and half of the chopped dry fruits. Cook on low flame for 5 more minutes so that the sweetness and aroma dissolve well in the milk.

Step 5: Tadka of dry fruits (Optional)

Heat 1 teaspoon ghee in a small pan, fry cashews, almonds and raisins in it till they turn light golden and then add to the kheer. This step will give your kheer recipe a hotel-like taste.

Step 6: Serve

Take out the prepared kheer in a bowl and garnish with the remaining dry fruits and saffron. You can serve it hot or cool it in the fridge. It tastes amazing in both the forms.

Special Tips (Pro Tips for Best Kheer Recipe)

  • Use full cream milk so that the kheer becomes creamy and delicious.
  • Cooking milk on low flame thickens it naturally, which makes the texture of the kheer better.
  • Add soaked rice only, not dry — this will save time and the rice will also cook properly.
  • If you want to make jaggery kheer, add jaggery when the milk cools down a bit, otherwise the milk may curdle.
  • Frying the dry fruits in ghee first takes the taste to a higher level.
