Ingredients:

Chicken Masala:

  • Chicken – 500 gms (with bone)
  • Onion – 2 large (finely chopped)
  • Tomatoes – 2 (finely chopped)
  • Green Chillies – 2 (chopped)
  • Ginger-Garlic Paste – 1 tbsp
  • Curd – 2 tbsp
  • Coriander Powder – 1 tsp
  • Cumin Powder – 1/2 tsp spoon
  • Red chili powder – 1 tsp
  • Turmeric powder – 1/2 tsp
  • Garam masala – 1/2 tsp
  • Oil – 2 tbsp
  • Ghee – 1 tbsp
  • Coriander leaves – 1 tbsp (chopped)
  • Salt – as per taste

For gravy:

  • Cashews – 10-12 (soak in water and make a paste)
  • Cream – 1/4 cup (optional, if you want a tastier and creamier gravy)
  • Water – as per requirement

1. Preparation of chicken:

Wash the chicken thoroughly, marinate it in curd, ginger-garlic paste, turmeric, red chili, coriander powder and salt for 30 minutes.

2. Prepare spices and gravy:

  • Soak cashews in water and make a paste.
  • Heat oil and ghee in a handi (or kadhai).
  • Add finely chopped onions and fry till golden.
  • Then add green chillies and ginger-garlic paste and fry for 2-3 minutes.

3. Cook the chicken:

  • Add the marinated chicken and fry well so that the spices get absorbed in the chicken.
  • Then add tomatoes and let it cook till it becomes soft.

4. Make the gravy:

  • Now add cashew paste and cream and mix well.
  • Add water and let the chicken cook on low flame for 20-25 minutes.
  • When the chicken is completely cooked and the gravy thickens, turn off the gas.

5. Decoration and serving:

Add green coriander on top and serve the handi chicken with hot roti or rice.
