  • Boiled Eggs – 4–6 (peeled)
  • Onion – 2 (finely chopped)
  • Tomatoes – 2 (puree or grated)
  • Ginger-Garlic Paste – 1 tbsp
  • Green Chilli – 1 (chopped)
  • Oil – 2 tbsp
  • Salt – to taste
  • Water – 1 cup (or as required)
  • Coriander leaves – for garnishing

Spices:

  • Turmeric – 1/2 tsp
  • Red chilli powder – 1 tsp
  • Coriander powder – 1 tsp
  • Garam masala – 1/2 tsp
  • Kasuri methi – 1/2 tsp (optional)

Step 1: Boiling and preparing the eggs

  • Boil the eggs, cool and peel them.
  • If you want, make a slight cutting in the eggs so that the spices go inside.
  • Heat some oil in a pan, lightly fry the eggs and keep aside.

Step 2: Making the masala base

  • Heat oil in the same pan, add onions and fry till golden brown.
  • Add ginger-garlic paste and green chillies, fry for 1 minute.
  • Now add tomatoes, salt and all the dry spices (turmeric, chilli, coriander powder).
  • Fry the masala till oil leaves the mixture.

Step 3: Making the Gravy

  • Add 1 cup water and cook the gravy for 3–5 minutes.
  • Now add the fried eggs and cook for 10 minutes on low flame.
  • Finally add garam masala and kasuri methi.

Step 4: Garnish and Serve

  • Garnish with coriander leaves and serve hot.
