Ingredients:

For marination:

  • Boneless chicken – 500 grams
  • Curd – 1/2 cup
  • Ginger garlic paste – 1 tablespoon
  • Lemon juice – 1 tablespoon
  • Turmeric – 1/4 teaspoon
  • Red chilli powder – 1 teaspoon
  • Garam Masala – 1/2 tsp
  • Salt – according to taste

For Gravy:

  • Tomatoes – 4 (medium, chopped)
  • Cashews – 10–12
  • Ginger Garlic – 1-1 tbsp (chopped)
  • Butter – 3 tbsp
  • Cream – 1/4 cup
  • Kasuri Methi – 1 tsp (crushed)
  • Red Chilli Powder – 1 tsp (Kashmiri Chilli)
  • Garam Masala – 1/2 tsp
  • Salt – according to taste
  • Sugar – 1/2 tsp (optional – for flavour balance)

Butter Chicken – Step by Step Method:

Step 1: Marinate the Chicken

Mix all the marination ingredients in the chicken and keep it in the fridge for 1 hour (or overnight).

Step 2: Cook the chicken

  • Add some butter to the pan and grill or roast the marinated chicken on medium flame till it turns light brown.
  • Keep aside.

Step 3: Prepare the gravy

  • Boil chopped tomatoes, cashews, ginger-garlic with some water for 8–10 minutes.
  • After it cools down, make a smooth paste in the mixer.
  • Now add butter in the same pan, add tomato-cashew paste.
  • Add spices (red chili powder, garam masala, salt, sugar) and cook for 7–8 minutes till oil separates.

Step 4: Add chicken

  • Add the roasted chicken to the gravy. Cook for 5–7 minutes.
  • Now add cream and kasuri methi and cook for 2 more minutes.

Step 5: Prepare and serve

  • Add some more cream and butter on top and serve hot butter chicken with butter naan, roti or jeera rice.
