Ingredients:
- Brinjal (large and fresh) – 1 (approx. 400–500 grams)
- Tomatoes – 2 (finely chopped)
- Onion – 1 large (finely chopped)
- Green chillies – 1 (finely chopped)
- Garlic – 4–5 cloves (chopped or crushed)
- Ginger – 1 inch (grated)
- Coriander powder – 1 tsp
- Red chilli powder – 1/2 tsp
- Turmeric powder – 1/4 tsp
- Salt – according to taste
- Oil – 2 tbsp
- Coriander leaves – for garnishing

Step 1: Roasting Brinjal
- Wash and wipe the brinjal and pierce it in 2–3 places.
- Roast directly on gas flame or in oven for 10–15 minutes till the skin turns black and soft inside.
- Let cool and peel and mash with a fork.
Step 2: Preparing Tadka
- Heat oil in a pan.
- Add garlic, ginger and green chillies to it.
- Then add onion and fry till golden.
- Now add tomatoes and add spices (turmeric, coriander powder, chili powder, salt) and fry for 4–5 minutes.
Step 3: Adding roasted brinjal
- Now add mashed brinjal and mix well.
- Cook on low flame for 5–7 minutes till the spices are well mixed.
Step 4: Serving
- Turn off the gas and sprinkle green coriander on top.
- Serve hot bharta with roti, paratha or millet roti.
