Ingredients:
- Boiled potatoes – 4 medium (cut into small pieces)
- Tomatoes – 3 medium (grated or pureed)
- Green chilli – 1 (finely chopped)
- Ginger – 1 tsp (grated)
- Turmeric powder – 1/2 tsp
- Red chilli powder – 1 tsp
- Coriander powder – 1 tsp
- Cumin seeds – 1/2 tsp spoon
- Asafoetida – a pinch
- Salt – according to taste
- Water – as required
- Coriander leaves – for garnishing
- Oil / Ghee – 1.5 tbsp

1. Tadka (tempering):
- Heat oil in a pan.
- Add cumin seeds, when they start crackling, add asafoetida, ginger and green chillies.
- After 30 seconds, add grated tomatoes.
2. Fry the spices:
- Add turmeric, chilli, coriander powder to the tomatoes and cook for 4–5 minutes.
- When the oil starts separating, understand that the masala is ready.
3. Add potatoes:
- Mash the boiled potatoes a little by hand and add to the masala.
- Mix well and add salt according to taste.
4. Add water and cook:
- Add 1 to 1.5 cups of water (as per the gravy you want).
- Cover and cook on low flame for 7–8 minutes.
5. Finishing Touches:
- Turn off the gas, garnish with coriander leaves.
- Serve hot with roti, paratha or puri.
