Ingredients:

  • Boiled potatoes – 4 medium (cut into small pieces)
  • Tomatoes – 3 medium (grated or pureed)
  • Green chilli – 1 (finely chopped)
  • Ginger – 1 tsp (grated)
  • Turmeric powder – 1/2 tsp
  • Red chilli powder – 1 tsp
  • Coriander powder – 1 tsp
  • Cumin seeds – 1/2 tsp spoon
  • Asafoetida – a pinch
  • Salt – according to taste
  • Water – as required
  • Coriander leaves – for garnishing
  • Oil / Ghee – 1.5 tbsp

Aloo Tamatar Recipe – Step by Step Method:

1. Tadka (tempering):

  • Heat oil in a pan.
  • Add cumin seeds, when they start crackling, add asafoetida, ginger and green chillies.
  • After 30 seconds, add grated tomatoes.

2. Fry the spices:

  • Add turmeric, chilli, coriander powder to the tomatoes and cook for 4–5 minutes.
  • When the oil starts separating, understand that the masala is ready.

3. Add potatoes:

  • Mash the boiled potatoes a little by hand and add to the masala.
  • Mix well and add salt according to taste.

4. Add water and cook:

  • Add 1 to 1.5 cups of water (as per the gravy you want).
  • Cover and cook on low flame for 7–8 minutes.

5. Finishing Touches:

  • Turn off the gas, garnish with coriander leaves.
  • Serve hot with roti, paratha or puri.
