Ingredients:
For Chicken:
- Boneless Chicken – 500 gms
- Turmeric – 1/2 tsp
- Salt – to taste
- Curd – 1 tbsp (optional)
For Roast Masala:
- Coriander leaves – 1 tbsp
- Dry red chilli – 6–8 (use more if you want the spotless one, less spicy)
- Cumin seeds – 1/2 tsp
- Fennel seeds – 1/2 tsp
- Fenugreek seeds – 1/4 tsp
- Black pepper – 1/2 tsp
- Garlic – 6–8 cloves
- Tamarind – 1 tbsp (soaked in water)
- Jaggery – 1 tsp (to balance the taste)
Other ingredients:
- Desi ghee – 3–4 tbsp
- Curry leaves – 8–10 leaves
- Salt – to taste
Step-by-Step Method to Make Chicken Ghee Roast:
Step 1: Prepare the chicken
- Mix the chicken with turmeric, salt and curd (if added) and marinate for 30 minutes.
Step 2: Roast the masala
- Dry roast the whole spices (coriander, red chili, cumin, fennel, fenugreek, black pepper) on a pan for 2–3 minutes till they release their aroma.
- Add garlic and tamarind and fry for 1 more minute.
Step 3: Grind the masala
- Cool the roasted masala and make a smooth paste in a mixer with some water and jaggery.
Step 4: Cook the chicken
- Add 1 tbsp ghee in the pan and cover the chicken and cook till it is 80% cooked (about 10–12 minutes).
Step 5: Roast in the masala
- Now remove the chicken and add 2–3 tbsp ghee and curry leaves in the same pan.
- Add the masala paste and fry on medium flame till it leaves oil (about 7–10 minutes).
- Now add the chicken back and fry for 5–7 minutes so that the masala coats well.
