7 Main Vegetables Used:

  • Potato – 1 (chopped into small pieces)
  • Carrot – 1 (chopped)
  • Cauliflower – 1 cup (small florets)
  • Green peas – 1/2 cup
  • Capsicum – 1/2 cup (chopped)
  • Okra – 1/2 cup (chopped)
  • Brinjal – 1/2 cup (small pieces)

You can add raisins or lentils to it You can also add beans, sweet corn or paneer to it.

Other Ingredients:

  • Onion – 2 (finely chopped)
  • Tomatoes – 2 (finely chopped or pureed)
  • Ginger-garlic paste – 1 tbsp
  • Cashews – 8–10 (soak in water and make a paste)
  • Curd – 2 tbsp
  • Turmeric powder – 1/2 tsp
  • Red chilli powder – 1 tsp
  • Coriander powder – 1 tsp
  • Garam masala – 1/2 tsp
  • Kasuri methi – 1 tsp
  • Salt – according to taste
  • Oil or ghee – 2 tbsp
  • Coriander leaves – for garnishing

1. Boil / Fry Vegetables:

  • All the vegetables should either be boiled (5-6 minutes) or lightly fried, so that their texture remains intact.

2. Prepare the Gravy:

  • Add chopped onions and fry till golden brown.
  • Add ginger-garlic paste and sauté.
  • Now add tomato puree, curd and all the dry spices (turmeric, chilli, coriander powder).
  • Then add cashew paste and mix well and sauté till oil separates.

3. Add Vegetables:

  • Add some water if needed.
  • Cook on low flame for 8–10 minutes.

4. Finishing Touches:

  • Finally add kasuri methi and garam masala.
  • Garnish with coriander leaves and serve hot.
